This recipe is a product of me tinkering in the kitchen, so I decided to share it with you.
This recipe can serve as a healthy condiment, sandwich spread or as a sneaky way to get your kids to eat veggies.
INGREDIENTS
250 grams Russet potatoes
100 grams Carrots
50 grams Parsley
50 grams Parsnip
A small onion
150 – 200 grams of blanched peanuts
A clove of garlic
Salt (you can add other spices per your taste)
Lemon juice
2 tablespoons of mustard
Step 1.
Clean the veggies.
Put about 1 – 1,5 liters of water into a pot, heat the water on high temperature.
Wait for the water to boil, put the veggies into the pot and boil on medium – low heat. This should take about 20 minutes give or take.
Step 2.
When the veggies are boiled cut them up so you can blend them easier.
Take the half of the veggies, add one tablespoon of mustard and a teaspoon of water. Blend them up in a food processor until you get a uniform mass. Do this for the second half of the batch also.
Step 3.
Now take the blanched peanuts and blend them in the food processor.
Step 4.
Take a big bowl and mix the blended veggies and the blended peanuts. Add salt and the spices you preffer. You should get a goldish spread.
For taste when I have mixed all of the ingredients I add the lemon juice about 2 teaspoons are enough.
Step 5.
Enjoy.
